Hearty plant-based goulash – quick, juicy and versatile
This vegan jackfruit goulash is prepared with Kumaio® Young Green Jackfruit and, thanks to its neutral taste, can be marinated in any desired flavor.

Their fibrous structure allows them to absorb marinades exceptionally well, and they develop a pleasant firmness when fried. The recipe works both classically and with a modern, spicy twist – depending on your choice of marinade.
Ingredients for the jackfruit goulash

Spicy marinade of your choice

Bell peppers (red or yellow)

Marinating jackfruit:
Mix the jackfruit with your favorite marinade – classic with paprika, pepper and tomato paste or exotic with curry paste.
(Tip: Thanks to the neutral base, almost any spicy marinade will work.) -
Sauté:
Sauté the marinated jackfruit pieces in a little oil until light roasted aromas develop. -
Add vegetables:
Add diced onions and pieces of bell pepper and sauté briefly. -
Seasoning:
Season with paprika, salt, and pepper. Stir in tomato paste. -
Simmering:
Deglaze with a little water and simmer for a few minutes until the desired consistency is reached.
