Indian curry with jackfruit recipe

We have a great love for curries! That's why we're always on the lookout for delicious and authentic curry spice blends that make preparing a curry simple, quick, and tasty. We're so happy to have finally found this one. Below you'll find a recipe for a delicious curry with coconut milk , which you can adapt to your liking.

FOR APPROXIMATELY 4 PEOPLE YOU WILL NEED:

  • 2 cans of Kumaio® - Jackfruit Pieces
  • 2 cans of Kumaio® - coconut milk
  • 1 onion, finely chopped
  • 3 carrots, finely chopped
  • 1 bell pepper, finely chopped
  • 1 zucchini, finely chopped
  • 1 pack of sugar snap peas, pre-blanched
  • 3 tablespoons of curry spice mix
  • Salt and pepper to taste
  • Vegetable oil for frying

HERE'S HOW IT'S DONE:
Sauté the onion pieces in a pan until translucent. Then add the carrots and sauté both together for a few minutes over medium-high heat. Next, add the bell peppers, zucchini, and jackfruit pieces.

Tip: You can chop the jackfruit pieces with your hands or a knife, depending on your needs.

Then you can add the curry spice to the vegetables and deglaze with the coconut milk. Let everything simmer together for about 10-15 minutes. Depending on the desired consistency, you can add a little more water. Finally, simply add the pre-blanched sugar snap peas, let everything simmer together for 1 minute, and the delicious curry is ready!

SERVING SUGGESTION:
Rice or naan bread goes perfectly with this curry! And crushed peanuts make a great topping !

Tip: Depending on your taste, you can also use other (seasonal) vegetables. And for those who like to eat meat: simply swap the jackfruit for chicken!
