FOR APPROXIMATELY 4 PEOPLE YOU WILL NEED:
- 2 cans of Kumaio® - Jackfruit Pieces
- 2 cans of Kumaio® - coconut milk
- 1 onion, finely chopped
- 3 carrots, finely chopped
- 1 bell pepper, finely chopped
- 1 zucchini, finely chopped
- 1 pack of sugar snap peas, pre-blanched
- 3 tablespoons of curry spice mix
- Salt and pepper to taste
- Vegetable oil for frying
HERE'S HOW IT'S DONE:
Sauté the onion pieces in a pan until translucent. Then add the carrots and sauté both together for a few minutes over medium-high heat. Next, add the bell peppers, zucchini, and jackfruit pieces.
Tip: You can chop the jackfruit pieces with your hands or a knife, depending on your needs.
Then you can add the curry spice to the vegetables and deglaze with the coconut milk. Let everything simmer together for about 10-15 minutes. Depending on the desired consistency, you can add a little more water. Finally, simply add the pre-blanched sugar snap peas, let everything simmer together for 1 minute, and the delicious curry is ready!
SERVING SUGGESTION:
Rice or naan bread goes perfectly with this curry! And crushed peanuts make a great topping !
Tip: Depending on your taste, you can also use other (seasonal) vegetables. And for those who like to eat meat: simply swap the jackfruit for chicken!
